So, I'll leave something up for your attention.
Which is better- to make a gourmet Shabbos, with 7 different side dishes and one course over the top- and then have to eat your way through the leftovers the entire week, or to make a much simpler Shabbos- all in one pot, or only 2 kugels- and then finish it all on Shabbos?
I'll leave it to your discretion. In my house, I used to go for the first method, but lately, as I find we don't really finish the leftovers either, till Thursday night, I find that the second works the best. But I do miss the feeling of bringing out thousands of new and delectable dishes.

Why not in-between? A simple base meal, with one or two special things subject to experimentation and fanfare?
Bas~Melech- If you're having guests, as I often do- I usually just stick to the basics, that I know will work, due to the fact that if they don't, I have a bunch
of hungry people to feed.
But it's true- although I usually do my experimentation with a new dessert or 2.
I'm just starting to cook, and I test out one new thing every time, but during the week. Shabbos is just the regulars. My family's not really into fancy side dishes and stuff, for that we have take out.
How about doing the first method, but with a little of each, if you want to be fancy. So this way you have a variety but yet no leftovers.
